This month we welcome Erik Tupper to the Urban Gleaners team. Over the last year, Erik has picked up a bounty of donations from the PSU Farmer’s market, and recently joined us for a summer internship. Erik is in his final quarter at Portland State University, and will receive his Bachelor of Science in Community Health Education with a minor in Environmental Sustainability. As a member of the Food Action Collective, a PSU student group focused on food justice, sustainable farming, and anything food related, Erik feels that Urban Gleaners is the perfect fit for his value set. He hopes to use his degree to develop educational programs focused on helping those with limited access to healthy food maximize the nutritional quality and value of their food shopping. He also hopes to collaborate with groups that work to improve Portland’s food infrastructure. In his free time, Erik enjoys walks with his girlfriend and beagle, playing with his nephew, strategic video games, and cooking for his family.
